Ingredients for 5 – 6 people:
12 Russet potatoes
2 Eggs
Flower 2 – 4 tablespoons
Salt and Pepper to taste
Grapeseed or Olive Oil
Creating the mix
Peel potatoes then cut into chunks
Grate with food processor
Beat 2 eggs, then add to grated potatoes
Add salt and pepper
Add flour while mixing to make a thick consistency
Frying the Latkes
Cover bottom of fry pan with generous amount of oil.
Add tablespoons amount of the mix to create pancakes in heated oil. Turn when the edges are brown.
Remove from pan when cooked on both sides and place on paper towel to absorb excess oil.
Sprinkle salt on pancakes while still hot.
Can serve immediately or freeze once cooled and heat in oven prior serving
