Ingredients (serves 4)

1 pound uncooked vermicelli or capellini
1 lb ground beef
1 28 oz can crushed tomatoes
1 28 oz can tomato puree
1 6 oz can tomato paste
1 bag frozen chopped onions
1 bag frozen chopped green pepper
salt
black pepper
2 tbs olive oil
2 slices of dry bread
1 egg
2 tbs parsley
garlic powder
oregano
crushed red pepper
4 bay leaves
Italian seasoning
sugar

Meat Sauce

Heat oil to the bottom of a large pot
Add 1/4 of bag of the frozen chopped green pepper and onion – stir until soft, but not brown
Add 1 pound of ground beef
Stir until meat browned
Add the crushed tomatoes, tomato puree and tomato paste and stir well.
Add a little red pepper, oregano, salt, pepper, Italian seasoning, parsley, garlic powder, bay leaves and sugar to taste – stir well.
Heat to a boil then reduce heat to bubble slowly.
Cook for 1 1/2 hours stirring from the bottom – leave uncovered or partially covered
Remove bay leaves after cooking – leave uncovered.

Meatballs

Soften bread by soaking water, then squeeze out excess water
Combine with 1 lb ground beef, 1 egg, 2 tbs parsley, sprinkle garlic powder, 1 tsp oregano, t tsp salt, 1/4 tsp pepper.
After mixing well, form into meat balls
Brown slightly in large skillet, then add to the Meat Sauce
Cook the combination on simmer for 60 – 90 minutes
